Chicken broccoli casserole

 A twist on an old family favorite 

Ingredients:

  • 2 1/2 cups chicken broth 
  • 1 1/2 cups milk
  • 3/4 cup flour
  • 1 tablespoon seasoning mix (or on your own, 1/2 tsp. onion powder, 1/2 tsp. garlic powder, 1/2 tsp. black pepper, 1 tsp. salt, 1/2 tsp. parsley, etc)
  • 1.5 cups cheddar cheese shredded 
  • 1 tablespoon curry powder 
  • Bag of steamable broccoli 
  • 2 chicken breasts cooked and shredded 
  • 2 cups cooked rice 
Instructions 

Combine the milk and the chicken broth in a pot over medium heat. Combine the flour with the seasoning then slowing whisk in liquid to create a roux. Add cheese to pot and stir until all melted and incorporated. Add curry powder 

Assemble your casserole in a glass baking dish spray the dish with nonstick spray. Preheat oven to 350°. Arrange rice at the bottom of the casserole dish. Steam your broccoli in the microwave then cut it into small pieces and spread over the rice. Then shred your cooked chicken breasts and spread that over the broccoli. Pour the whole sauce on top and smooth. Bake in the oven for about 20 minutes
